What is fermentation? Industrial fermentation supports novel food production, including alternative proteins, functional ingredients, and nutritional compounds. At scale, it’s a controlled biotechnological process where microorganisms or cells convert raw materials into valuable products while generating significant metabolic heat. 

The Alfa Laval Fermentation System outperforms legacy designs. Its external-loop heat exchangers cool more efficiently and reliably than traditional jacketed fermenters with internal coils, ensuring stable conditions, predictable quality, energy efficiency, and superior hygiene.

How the Fermentation System works  

The Alfa Laval Fermentation System is advanced fermentation equipment engineered for precise control across modern biotechnological processes and scalable fermentation food processing. It has four operation modes.  

 

  • Sterilization  
    Water is added, and the external-loop heat exchanger is heated with steam or hot water. After the required holding time, the system is emptied to ensure a sterile start to the fermentation process. For smaller-scale applications, unsterilized media can be pumped directly into the fermenter, where a hot-water heater integrated with the unit enables sterilization-in-place. 
     
  • Fermentation 
    Sterilized media and inoculum are introduced. Air, cooling, and chemicals are precisely controlled. The system supports batch,  fed-batch, or continuous operation for precision and biomass fermentation.  
     
  • Emptying  
    Air, media, and chemical inputs are stopped. Valve configuration directs product out before the heat exchanger, enabling controlled harvest.  
     
  • Cleaning  
    Cleaning-in-place (CIP) media is circulated through tank nozzles and the external loop, then returned to the CIP station – readying the system for the next cycle.
