The hurdle they faced

So, it was in northeast Italy where leading food producer Surgital had consumers rushing to buy their deep-frozen ready meals, pasta and sauces, but a bottleneck in the cooling process for their sauces saw them call on Tetra Pak and Alfa Laval for support.

Introducing an additional temperature-reducing step into the process using a Contherm Max scraped surface heat exchanger allowed increased throughput and eliminated the bottleneck, achieving the goal of capacity expansion.
The realized advantages
The uniform cooling treatment and reduced time produced a deeper micro-crystallisation, which meant an even higher quality sauce, and a more consistent weight and shape across the batches of frozen sauce cubes. And as for production capacity, cost savings and sustainability benefits, the results speak for themselves:
- 20% capacity increase in uptime
- 150 tonnes of CO2 emissions saved per year
- €32,000 reduction in annual maintenance costs through the inclusion of a twin-screw pump
- €36,000 in electrical energy savings
